Eggless Egg Salad

Serves 4

We bring our Eggless Egg Salad to many social gatherings. Many people are hesitant to try this dish due to their fear of tofu. But once they mustered up the courage to try it, each went back for a second helping. As a result, we always bring back an empty bowl.

1 Pound Firm Tofu
1 Small Onion
2 Stalks Celery
½ Cup Fresh Parsley
¼ Cup Relish
½ Cup Vegenaise or Mayonnaise
1 tbsp. Mustard
1 tsp Garlic Powder
½ tsp Turmeric
½ tsp Mustard Powder
Salt to taste
What to Do
1) Drain tofu
2) Place tofu into a bowl and smash until egg salad like consistency

3) Peel and chop the onion; then add it to the bowl of tofu
4) Wash, remove the celery leaves; then add it to the bowl of tofu
5) Wash, remove from steams then measure ½ cup of parsley. Mince and add to the bowl 6) Add relish
7) Add Vegenaise or Mayonnaise
8) Add Mustard
9) Add remaining spices


10) Stir until mixed thoroughly and chill
