Easy Black Bean Soup

Serves 6

Are you feeling chilled by the outside temperatures? If so, this soup should help warm you up. We find this recipe to be both is filling and super simple to make.

Ingredients

3 Cloves of Garlic – Diced
1 Medium Onion – Chopped
1 Red Pepper – Chopped
1 Lime – Juiced
46.5 ounces of Black Beans – (Three 15.5 oz. cans or fresh beans to yield 46.5 oz.)
3 Cups Vegetable Broth
1 tbsp. Mediterranean Thyme or Oregano
1 tbsp. Cumin
Bay Leaf
½ tsp Turmeric
2 tsp Paprika
½ tsp Aleppo Pepper or Red Pepper Flakes
Salt & Pepper to Taste

 

What to Do

1) If using fresh black beans – Soak beans, in separate containers overnight. Cover beans with water and a pinch of baking soda.
2) Place beans in separate pans, cover with water. Once the water has boiled, reduce the heat and simmer until the beans are tender. Cooking time should take 30-45 minutes on average.
3) Once cooked, drain and allow to cool.
4) If can beans are used, skip steps 1-3. Drain and Rinse
5) Sautee garlic until slightly brown on the edges.
6) Add onion and cook until translucent.
7) Add red pepper – continue cooking until tender.20181113_181034
8) Add vegetable broth, beans, lime juice, and all spices – stir to combine.
9) Cover and bring to boil. Once boiling, lower heat and simmer for 30 minutes.

10) After 30 minutes, blend ½ of soup. Leave ½ of the vegetables whole.20181113_185743
11) Add salt and pepper to taste
12) Serve warm. – Feel free to add chips, sour cream (or vegan alternative), and or avocado. Crispy bread works great as a chip alternative.
