Breakfast Tofu Scramble

 Looking for breakfast ideas? Or maybe you are wondering how to cook tofu. Tofu recipes are some of our favorite to make because tofu is so versatile. This, one of our many vegan recipes, makes a wonderful breakfast. It’s full of vegetables and is a tasty recipe. For those who are looking for vegetarian recipes, we have included a simple change to accommodate you as well.

This vegan recipe serves 4

 Recipe Ingredients

  • Tofu – Extra Firm, Crumbled by you
  • Kale – 2 Cups, Stems Removed and Chopped
  • Baby Potatoes – 1 ½ pounds
  • Shallot Large – Chopped
  • Black Beans – 1 Cup Cooked
  • Garlic – 3 Cloves Minced
  • Red Pepper – 1 Cup Chopped (We like to use a variety of peppers. But in a pinch, red peppers work well)
  • Nutritional Yeast – ¼ Cup
  • Turmeric – ½ tsp
  • Paprika – ½ tsp
  • Chili Powder – ½ tsp
  • Salt & Pepper to Taste
  • Vegan Cheddar Cheese – ¼ Cup Shredded
  • Warm Water – ¼ Cup
  • Olive Oil – 1 tbsp.

 To make this a vegetarian recipe, change out the Nutritional yeast for Parmesan Cheese. Also, swap out the Vegan Cheddar for Cheddar Cheese

 What to do

  1. Parboil the potatoes until they are somewhat soft yet firm.
  2. Heat the Olive Oil in a large pan. Then, add the potatoes and cook until slightly browned on all side.
  3. Add chopped shallot, chopped red pepper, minced garlic, and chopped kale. Cook until ingredients start to become tender.
  4. Add black beans. Cook until the beans are hot.
  5. Now add the crumbled tofu.

  6. While the tofu heats, mix all spices, with the exception of the salt and pepper, into warm water.
  7. Add the spiced water and Nutritional Yeast or Parmesan cheese for if not making the vegan recipe, to the pan and cook until the tofu has heated through and the water is completely absorbed.
  8. Now, add the Vegan Cheddar Cheese.  If making the vegetarian recipe, add the cheddar cheese now.
  9. Salt and pepper to taste.
