Delectable Irish Mashed Potatoes

There are many versions of an Irish Mashed Potatoes recipe available on the internet, but our all-time favorite is this recipe due to the inclusion of leeks. We used to make this side dish with whole milk, and you still can if you like whole milk. These days, however, we enjoy this vegetarian recipe so much more by replacing the cows milk with Unsweetened Almond Milk. Moreover, the addition of fresh a leek and replacing the whole milk with the almond milk helped us fall in love with our Delectable Irish Mashed Potatoes Recipe.

Delectable Irish Mashed Potatoes – Vegan Recipe Alternative

To make this a vegan recipe, replace the butter with vegan butter. Also, oat milk is an excellent alternative to almond milk, if you prefer.

Delectable Irish Mashed Potatoes Ingredients

  • Potatoes – ½ Pound, Washed, Peeled, and Diced
  • Unsweetened Almond Milk – 5 Tablespoons
  • Cabbage – Shredded to 2 Cups
  • Butter – 1 Scant Tablespoon
  • Leek – One large – Chopped
  • Salt and Pepper – To Taste
  • Nutmeg – 1/8 Teaspoon

Prepare the Recipe

  1. Wash, dry, peel, and then dice the potatoes.
  2. Next, wash and dry the leek. Then you will cut and discard the root area and remove any unsightly bottom leaves. Now, chop the leek and set aside with the diced potato.
  3. For this step, add the unsweetened almond milk to a pan large enough also to hold the potatoes and leek. Bring the almond milk to a boil.
  4. Once the almond milk begins to boil, add the chopped leek and diced potatoes.
  5. As soon as the almond milk boils, reduce the pot to simmer.
  6. Continue simmering until the potatoes are soft enough to mash. On average, it should take about twenty minutes for the potatoes to cook.
  7. While the potato mixture is cooking, prepare the cabbage. Start by boiling water in a pot large enough to hold the two cups of shredded cabbage.
  8. Next, begin washing and drying the cabbage. Now, cut the cabbage in half. To shred the cabbage cut one quarter inch hunks off the short end. Continue shredding until you have two cups worth.
  9. Once the water is boiling, add the two cups of shredded cabbage. Cook until tender. We have found to get the best cabbage texture, boil for 5-10 minutes.
  10. Drain the cabbage and set aside.
  11. As soon as the potato mixture has cooked, remove from heat and add the one-eighth teaspoon of nutmeg.
  12. With the back of a large spoon or hand masher, begin mashing the cooked potatoes and leek.
  13. Once mashed, mix in the well-drained cabbage.
  14. Add salt and pepper to taste.
  15. Meanwhile, melt the one scant teaspoon of butter or vegan butter.
  16. Place the potato mixture into a serving dish. Create an indentation in the center of the mix. Then add the melted butter.
  17. Serve hot as a side dish.

While the ingredients are a bit similar to our Delectable Irish Mashed Potatoes, the spices make this recipe taste entirely different. Our Potato & Cabbage Casserole can also be transformed into a vegan recipe by using vegan butter (or vegan margarine) in place of the butter.
