We are just lucky enough to get the health benefits of beets from something we love to eat.

Stewed Beets Ingredients
- Raw Beets – 1 ½ pounds
- Garlic – 2 Cloves Minced
- Onions – 2 Medium – Cut into Wedges
- Olive Oil – 1 Tablespoon
- Lemon – 1 – Juiced
- Tomato Sauce or Puree – 2 Tablespoons
- Water – 1/3 Cup
- Salt – Pinch
- Black Pepper – Pinch
- Cumin – 1 ½ Teaspoons of Cumin Seeds
How to prepare Stewed Beets
Start by removing and discarding the stems. Now wash and peel the beets.

Next cut the beets into wedges.

Mince the two cloves of garlic.
Peel and cut the onions into wedges. Do not worry if the onions do not stay in wedges.

In a large pot, heat olive oil on medium heat. Then reduce to low and add the Cumin Seeds. Heat until the Cumin becomes fragrant.

Then, add the garlic. Cook until the garlic begins to brown.
Now, add the onion and sauté until translucent.

Add to the sautéed items the beets, juice of one lemon, two tablespoons of tomato sauce or tomato puree, one third cup water, a pinch of salt, and a pinch of black pepper.
Bring all of the ingredients to a boil.
Once the pot is boiling, lower heat and cover.
Simmer for approximately 45 minutes or until the beets are tender.

Stewed Beets
Serve hot and enjoy.
