Cabbage with Vegetarian Sausage

Those who follow our blog know how we love to focus on easy to prepare recipes whenever we can. The recipe below fits perfectly with our easy vegetarian recipes. Our Cabbage with Vegetarian Sausage is super simple and one of our favorite cabbage recipes.

To make the recipe vegan, all you have to do is use a vegan sausage instead. In most cases, that is how we make this dish. Many of the store-bought sausages are vegan anyway. So, it is super easy to turn this dish vegan.

As you can see, we are using caraway seeds as our spice. Caraway Seeds also go by the names Persian Cumin and Meridian Fennel. The flavor is similar to mild anise. There is something about cabbage and caraway seed combo that makes us go yum. This spice works so well in this recipe.

Cabbage with Vegetarian Sausage Ingredients

  • Onion – 1 Large Cut into Wedges
  • Vegetarian Sausage – 14 Ounces (or Vegan Sausage)
  • Cabbage – 1 Small Head – Shredded
  • Olive Oil – 1 Tablespoon
  • Caraway Seeds – 1 Tablespoon
  • Water – 1 Tablespoon
  • Salt – To Taste

Prepare Cabbage with Vegetarian Sausage

Begin by cutting the vegetarian sausage, or vegan sausage, into quarter-inch thick rounds. Set aside.

Shred the cabbage. Then separate the cabbage pieces.

Next, cut the onion into wedges. You do this by cutting the onion in half. Then, cut those pieces in half. Essentially, you are quartering the onion. Now, separate the onion pieces.

For this step, heat a pan large enough to hold all of the cabbage, onions, and sausage on low heat. We like using a wok for this recipe. Add one teaspoon of the oil. Once the olive oil has heated, you can begin the cooking by browning the sausage. Be sure to turn the sausage until it is browned evenly on both sides. Add more oil if needed. Once cooked, remove sausage from the pan.

Return the pan, without the sausage, to the stove. Heat the remaining olive oil.

Once heated again, add both the onion and cabbage. Stir to combine. Next, add the one teaspoon of water and stir. Then, cover while heating on low heat. Stir frequently to prevent the ingredients from sticking and burning.

Once the cabbage begins to wilt and brown, add the sausage and caraway seeds. Now stir to combine. Keep cooking uncovered until the sausage has reheated and the cabbage and onions have completely wilted and browned.

Next, add salt to taste.

Serve hot as a side dish or a main course.
