Potato & Carrot One Pot Meal
Do you know what we love about making a One Pot Meal? First, we love the lack of dirty dishes. One pot recipes generally only require a knife for chopping, a cutting board, a spoon for stirring, and a single pot for cooking, just as the name implies. The removal of all the pots, pans, and extra utensils make this meal so attractive to us.
The Second reason we love one pot meals is we are feed multiple times just by creating this one recipe. How wonderful is that? We prepare the recipe one time, eat it right after it’s cooked. Then bam, we have lunch and or dinner already prepped.
Thirdly we love healthy one pot meals, such as this Potato & Carrot One Pot Meal, because it’s healthy. Only fresh and healthy ingredients are used. So there is no need to feel guilty eating this delicious meal.

Now on to the recipe.
Potato & Carrot One Pot Meal Ingredients
- Yukon Gold Potatoes – 3 Pounds
- Onion – 1 Large
- Carrots – 3 Pounds
- Water – 1 to 1 ¼ Cup
- Paprika – ¾ Teaspoon
- Bay Leaves – 3 Whole
- Salt – Finely Ground ¼ Teaspoon or (½ Teaspoon Coarse Salt)
- Ground Black Pepper – ½ Teaspoon
- Olive Oil – 1 Tablespoon
How to Prepare
Wash and peel the three pounds of Yukon Gold Potatoes. Then cut each potato into 2-inch pieces, set aside.
Wash the three pounds of carrots. Remove both the top and bottom of the carrot and discard. Peel the carrots if you so desire. Cut the carrots into 1.5-inch rounds. Now cut those rounds in half, long ways and set aside.
Next, remove the ends of the onion and peel. Cut the onion into ½ inch thick rings. Then, quarter the rings of onion and separate.
Now add the tablespoon of olive oil to one of your large cooking pots. This pot must be large enough to hold all of the ingredients and still allow stirring.
Once the oil has been heated over medium heat, add the onions. Now sauté the onions. Continue cooking the onions until they have become translucent.
For this step, add the potato and cut carrots to the pot of sautéed onions.
Next add the bay leaves, paprika, salt, and pepper.
Add 1 cup of water and stir to combine.
Turn the heat to high, uncovered. Once the pot boils, reduce heat to low and simmer for 20-30 minutes or until the potatoes and carrots are soft but not soft enough to make mashed potatoes. Stir occasionally to prevent sticking. If during the cooking process, the pot begins to dry and the vegetables begin to stick, add the additional water. Expect some moisture to be left when this meal is cooked.
Serve Hot.
