Tasty Potato and Zucchini Side Dish

While we specialize in Vegetarian Recipes, we also offer a Vegan Recipe Alternative whenever we can. This recipe just happens to be vegan. Vegetarians and even meat eaters can also enjoy this tasty side dish.

One of our favorite ingredients is adding fresh ginger to a dish. We like to use it whenever we can. While this potato, zucchini recipe does contain ginger, the amount we used does not stand out at all. While it adds to the flavor, there is no ginger bite. Should you enjoy the bold flavor of ginger, do not hesitate to add more. We have used many different vegetables in this recipe. We encourage you to exchange any vegetable with either one of your favorites, or whatever vegetable might be in season.

Ingredients

Red Potatoes – 13 Ounces, Quartered
Green Beans – ½ Cup Cut into 1-Inch Pieces
Zucchini – 1 Large Cut into 1-Inch Rounds. Then, Quarter the Rounds.
Corn – 1 Ear, Remove Raw Kernels
Mushrooms – ½ Cup, Sliced
Leak – 1 Chopped
Onion – ¼ Cup, Cut into 1.5-inch Lengths
Ginger – ½ tsp, Minced
Cumin Seeds – 1 tsp
Paprika – ¼ tsp
Mango Powder – ¾ tsp (Can Use Lemon Juice as a Replacement)
Coriander Seed Powder – ½ tsp (Grind Seeds to ½ tsp of actual powder0
Garam Masala – ½ tsp
Olive Oil – 1 tbsp

What to do

1) Parboil Potatoes.
2) Heat oil, then add the Parboiled Potatoes.
3) Do not stir often. Otherwise, the Potatoes will fall apart.
4) When the Potatoes begin to brown slightly, turn them.
5) Add the Zucchini, Green Beans, Corn
6) At this point, the Potatoes will be firmer, so you may stir more frequently, but be gentle still.
7) Continue cooking until the Zucchini, Green Beans and Corn begin to soften
8) Add the Mushroom, Leaks, Ginger, and spices.
9) Cook until the Mushrooms has reduced in size.
