Savory Open-Faced Sandwich

This tomato sandwich, with onions, goes so well over your favorite buttered toast if you enjoy vegetarian sandwiches. Or, if preferred, this Savory Open-Faced Sandwich recipe works just as wonderfully with vegan toast.

When it comes to the type tomatoes that can be used for this recipe, the choice is completely yours. The two types that we love most with this recipe are the Roma Tomatoes and also the Heirloom Tomatoes. However, we have used other types that were just as flavorful in this recipe.

Savory Open-Faced Sandwich Ingredients

  • Tomatoes – 6 Large, Chopped
  • Onion – 1 Large – Sliced into Rings, then the Slices Halved
  • Butter (For the Vegetarian Recipe), Vegan Butter (for the Vegan Recipe) – 3 Tablespoons
  • Sugar – Vegan Sugar (for the Vegan Recipe) – 1 Tablespoon
  • Italian Seasoning – ½ Teaspoon
  • Black Pepper – ¼ Teaspoon
  • Salt – ¼ Teaspoon
  • Bread – Sliced for Toasting

Prepare the Savory Open-Faced Sandwich

Start by peeling and slicing the onions in to rings. Then, cut the rings in half.

Next, wash and chop the tomatoes.

Now, on a medium temperature, heat the butter, or vegan margarine, in a deep pot.

Once the butter or margarine is nearly melted, add the onions.

Sautee the onions until they begin to brown.

Once browned, add the tomatoes, Italian Seasoning, Salt, and Pepper.

The tomatoes will start to cook down and create some liquid.

Simmer until the tomatoes are tender. This cooking time is approximately fifteen to twenty minutes.

Cook Until Tomatoes are Tender

Once the tomatoes are tender, remove from heat.

Now that the tomatoes have finished cooking, slice and toast your favorite bread to your favorite level of brownness.

Next, spread your favorite butter or vegan margarine onto the freshly cooked toast.

Using a slotted spoon, spread the tomato and onion mixture onto the toast. Remember this is an open-faced sandwich.
