Tempeh Reuben Sandwich

This Tempeh Reuben Sandwich is a quick and easy vegetarian recipe. While Rueben’s are generally made with Russian Dressing, we prefer using Thousand Island along side the sauerkraut and cheese.
Tempeh (Tem-PAY) – This high protein product was first used in the country of Indonesia. Since then it has traveled throughout the world as people added this high protein meat alternative to their food. Tempeh is traditionally made with soybean that have been cooked, soaked, fermented and shaped into a patty. However, other grains are also used such as barley, millet and brown rice.
Ingredients
1 Package of Tempeh – Uncut
4 tbsp. Thousand Island or Russian Dressing (We prefer thousand Island)
8 tbsp. Sauerkraut
8 Slices of Bread
1 tbsp. Olive Oil
8 Slices Swiss Cheese
What to do
1) Cut the tempeh in half.
2) Cut each tempeh half down the middle to create 4 equal pieces
3) Heat the oil in a large frying pan.
4) Place tempeh into pan and fry until lightly brown.
5) Turn the tempeh and brown the other side.
6) While the tempeh is cooking, prepare the bread and add a slice of cheese or the equivalent to a slice.
7) Once cooked, place a piece onto a cheese covered slice of bread.
8) Add 2 tbsp. of sauerkraut.
9) Add a tbsp. of dressing.
10) Place the second slice on top to complete the sandwich.
