Cajun Vegetarian Rice

Cajun Vegetarian Rice
Serves 4
Due to extensive travel throughout Central America, we fell in love with rice for breakfast. Generally, that is when we eat this dish. However, we have been known to also consume it at dinner as well; either as the meal or as a side. This Cajun Vegetarian Rice is a wonderful dish no matter when you choose to eat it.
Ingredients
White Rice – 2 Cups
Low Sodium Pinto Beans – 1 Can
Onion – 1 Medium
Red Pepper – ½
Yellow Pepper – ½
Jalapeno or Serrano – 1
Olive Oil – 1 tbsp.
Cajun Seasoning – 1 tsp
What to Do
1) Cook one cup of white rice. If you choose to use a Rice Cooker, follow the instructions pictured below. Or, follow the directions which came with your rice cooker.
2) Peel and large dice the onion.
3) Now, remove seeds from the peppers. The, large dice the red and yellow peppers.
4) Dice the Jalapeno or Serrano (Remove the seeds for a less spicy dish).
5) Drain and rinse pinto beans, if using canned beans. Skip this part if using fresh beans.
6) Heat a large frying pan over medium heat, then add the olive oil.
7) Once heated, add the onion and sauté until they are beginning to soften and start turning translucent.
8) Next, add the red, yellow and jalapeno or serrano – cook until tender.
9) Add the pinto bean and cook until the beans are thoroughly hot.
10) Remove from heat. Then, stir in cooked rice.
11) Add the Cajun spice and stir until mixed thoroughly. Then, serve.
